Ingredients and Quantity
Wheat flour type T405: 0.825 kg
Sugar: 0.125 kg
Salt: 0.010 kg
Butter: 0.125 kg
2 eggs
Yeast: 0.032 kg
Lemon zest/vanilla to taste
Whole milk: 0.200 kg
Dough recipe
Knead all the ingredients (see above) with a hand mixer to form a smooth dough. The dough is ready when it comes away from the side of the bowl and no longer sticks. Cover the dough with a cloth and leave it to rest in a warm place for about 30 minutes.
Cinnamon mixture recipe
Make the cinnamon mixture from 250 g warm butter, 250 g sugar, 5 g cinnamon and 50 g wheat flour.
Beat the butter and sugar briefly with a mixer and then stir in the cinnamon and flour. Now you can spread the mixture over the dough.
